Nice!! Did you have Jamon Iberico or Jamon Serrano?

Iberico de Bellota is the highest grade. But even in this grade there is an additional hierarchy.

I could eat it every day!

And why don't they sell Jamon flavored chips in the U.S.?!

Jamòn makes prosciutto di Parma taste like bark.

Iberico is my all time favorite food.

I'm so glad you've experienced it!

Twice the aging, and a tendency to allow the animals to roam freely will do that.

I've never had Iberico but I buy Serrano once in awhile. It is what's carried at my semi-local specialty type grocery store. Miles better than any proscuitto I've ever had. MILES I tell ya!!

There is a new spanish/tapas restaurant near my house which has a "tasting plate" of four different hams, including Jamon Serrano and one local specaily cured ham in a similar style. Really worth getting and sharing to get a sense of the variety and quality of high-end cured hams. I'm getting hungry now just thinking about it.

If you are a real fanatic, there was a quirky spanish movie called "Jamon Jamon" which is set in spain in the ham-producing area, and has a romantic/sensual and I recall humorous point of view, worth checking out. Cast includes Javier Bardem and Penelope Cruz, who both went on to global stardorm. My wife lived in Spain for a few years, and is a total foodie so she introduced me to this.
