Rub with olive oil, sprinkle with dry mustard powder, shower with cracked (or fresh ground) pepper and then just before you throw them on the b.b.q. salt them quite heavily. Salting too early draws the moisture out of the steaks and makes them tough. Keep salting (not as heavy now) and putting on pepper every time you flip or rotate them.

Don’t worry about the dry mustard powder - it won’t make the steaks taste too hot.

Can’t beat it with a stick.

Come on, no one uses A1? That stuff is the sh**. I put it on everything. However, an interesting combination is Szechwan (cant spell that) Steak with roasted mushrooms from Bamboo in East Hampton, NY. Heaven on earth.

Marinate the steak in olive oil and garlic. Then after its cooked put a little bit of salt on it, and some tony romas bbq sauce on the side.

I know a few people who use A1 on steak... I cringe when they ask for it at nice restaurants, and cringe again when they drown a good steak in it.

there's a very funny French chef episode where Julia is cooking some red meat cut and when she gets to the part where she tells you how to cook it, she stops what she's doing, gets very serious, and tells the viewer that red meat is to be cooked Medium-Rare, and if you don't like that, go eat something else.

    :)
