    Actually, the only tough thing is time. None of it is really rocket science. I learned this technique when I lived in KCKS from a friend. You could get excellent ribs just about anywhere.

    For the brethren who are BBQ freaks (like me) I also love mesquite chicken and steak which is really easy by using chips of water soaked mesquite tossed on a normal grill fire while cooking, using the cover for a few minutes.

    To turn any grill into a smoker (I have a Weber), invest in a three pound can of coffee. When used up, carefully cut the can in half and smooth off the sharp edges. To smoke, set this fire ring off to the side, fill with charcoal and get going. simply place ribs or other meat around but, not on top of the coals. Add well water-logged hickory chips to the fire ring and cover. Allow the vent to be open just enough to keep the coals going. Check every thirty minutes and add chips when necessary. You will be amazed how little charcoal you need to do this. Try it!

    I start with KC Masterpiece. The really good stuff is out your way and hard to get. Depends on what you like. You can add any number of jelly flavors, hot sauces, salsas. Experiment.

    The Outdoor Grill is the best BBQ shack around here and they sell their own sauce. If you want to kick it up a notch, add in a dash (JUST A DASH!!!) of Jamaica Jerk batch #147 and it's even better!
