Can a site (porn or otherwise) get your email address just by visiting it?

No. Your email address is technically in no way related to your computer. You have to enter it manually. But if you write your email address for example in public forum posts like here, it will sooner or later end up in some spammers list, as those guys have programs 'crawling' web sites for email addresses. You say it's your business email, so if the address is visible to the public on your company's website, it will most likely have been recognized by some crawler program.

In my experience, if you diligently delete all unknown messages (everything except from people known to you) without opening any of them, the amount of SPAM will diminish over time.

If you open one or (heaven forbid) click on anything while there, the alarm goes out that you're a live person with a real email address and the process of jamming your mailbox with Viagra and mortgage come-ons begins again.

For a business, you can't do much better than Postini for spam filtering. They're expensive and generally do enterprise-only setups, but you can get with a reseller and purchase the service that way if you're smaller. We were at 10s of millions of bogus emails daily before outsourcing the spam filtering to them, it made a HUGE difference.

For a smaller setup, try signing up for a gmail account and setting your original address to forward to that account. Gmail has pretty good spam filtering, and a nasty TOS, so pick your poison.

(Yes, I know Google owns Postini now. Doesn't change my opinion of the two)

Gotta bump this and with this quote. These are great solutions.

Even if you have to point your MX records at google and use a google for business account, it is worth it. Probably 50 bucks a year (what we pay per user) w/shared documents, etc. and even cheaper for non-profits. If you have more than a handful of employees, say 35 and up, AND you are hosting your own mail, invest in a barracuda unit which will take care of the spam.

I'm a bit reluctant to use Gmail, as Google do whatever they want with your data, and that includes the content of your mails...

Not exactly 'whatever they want'. You'll need to go over their T&C carefully: http://www.google.com/a/help/intl/en/admins/terms.html
