So, I was thinking (always dangerous)

Due to the offset of the 308/early 328, we pretty much have to use spacers to get later model wheels to attach correctly.

Is there any need to stay with a Ferrari bolt pattern? Is there any technical/safety reason why the spacer can't be an adapter, and change the pattern to something more common in the aftermarket?

An adapter would need to be much thicker to allow for however it bolts on and in turn is bolted to, I believe.
A spacer is simply bolted through.

I'd agree with your feeling here (assuming the thickness is large enough as Modeler indicated, say >25 mm). As long as the bolt circle of the new pattern isn't wildly different from the stock F pattern, the risks/issues are no different than for an F-to-F adapter (assuming similar design, quality, fabrication, etc.). Cost may be a different issue ;)
