    Wasabi Bistro in Seattle has the best sushi.

    Amada is very good. Jose Garces is a talented chef.

    But in Philly the best two in my opinion are Le Bec Fin and Vetri. Marc Vetri's other place Osteria is also outstanding.

    Way too many faves to name in general, but Chez Panisse in Berkeley is great, in NYC I like Landmarc, Megu, Gotham, Union Sq. Cafe, Le Cirque (think it's gone now), and so many more... Will be trying Per Se soon. And Masa when I can work up the courage to drop $400 + per person on sushi...

    ok maybe not the place for it but the reuben at carnegie deli is awesome...joes stone crab just down from 112 on south beach is pretty tasty as well. Scomas in SFO is the best.

    Shabu Tatsu - NYC around St. Mark's

    Best shabu shabu i've had; reasonably priced at around $30 - $40 per person. I have spent over $2k there in a one year span, pretty much went every week. Thats one thing I miss the most from NY.

    Canlis, in Seattle, is easily the finest restaurant I've ever eaten at. A little conservative (jackets required for "Gentlemen"). Their Wagyu tenderloin (Kobe-style) was without doubt the finest piece of cow ever to be put in front of me. At $72 (before vegetables) though, it ain't exactly a bargain, but compared to "real" Kobe steak, I suppose it's "cheap". It does however taste divine. Service there is of the highest standard, and their valets do not hand out tickets but will always have your car waiting for you before exiting the restaurant. Excellent wine list, both old-world and new-world wines. Nice ambience and great view of Lake Union.

    I've always wanted to eat at "The Herb Farm" (also in WA state) -- but I've balked at the ~$300pp pay-months-in-advance cost. I've heard good feedback though -- anyone here tried it ?

    Best Thai food I've found (a personal favorite) has been in a rinky-dink strip-mall in Las Vegas (recommended by a few f-chatters here) in an Hispanic part of town. Absolutely phenominal. This is closely followed by "Chantanee" in Bellevue, WA.

    My wife and I stayed at the Hilton Maldives (now re-branded Conrad) for our honeymoon. Fabulous meals every day, and one of the finest hotels I've ever stayed at in terms of service.

    Morton's Steakhouse - Singapore's Mandarin Oriental (I ate multiple Morton's in the US, the one in Singapore had excellent service along with the great steak)
    Hawker stations in Singapore also offer extremely good local cuisine - recommend trying the curry fish head or the Hainan Chicken rice at Wen Tung Chee
    Jade in Hong Kong - great dumplings
    Morimoto New York - tried the chicken noodle soup 3 years ago and remember it to this day, noodles were hand made and the soup was great
    Mayflower restaurant at the Great Mall in Milpitas, CA - the best salt and pepper fried calamari (actually made with cuttle fish)
    Shabu Shabu House - Little Tokyo, Los Angeles, not much atmosphere, long wait, but great food
    Forbes Mill Steakhouse - Los Gatos, CA - great steak
    Pho Hoa An II - Best Vietnamese noodles (I live in San Jose and I drive down to Gilroy at least once a month to eat there) and you have to try the deep fried shrimp cake appetizer
