Corned Beef and Cabbage

    In celebration of St Patrick's Day I decided to make my first ever Corned Beef. Got a recipe and put it in the oven a couple of hours ago, and let me tell you--the smell is AMAZING. My mouth is watering and it needs to cook a couple more hours.

    Anybody else cook one of these?

    I did boil it. Put it in a dutch oven on the stove and when it came up to temp popped it in the oven for 4 hours. It was phenominal! We all loved it, I had enough left over to do some corned beef hash this weekend....we can't wait.

    You know what? The Bill Bailey's brand at Costco ain't half bad but here's the trick.....

    With any of the store bought, boil what's in the bag ones, use a pressure cooker for 1 1/2 -2 hours (depending on the size) instead of a pot or dutch oven and it'll fall apart! ;):)

    We always start ours (I know, good Jew family having a St. Pat's dinner :D) in
    the crockpot - started at 8:30 AM today - ate at 6:30 - FABULOUS!!!!! Had
    fresh baby red potatoes, carrots, and celery, with fresh bay leaves from our
    own garden... with The Chieftan's on Pandora in the kitchen for a little Irish
    flair....

    MOST yummy. And LOTS left for sandwiches. When cooked that long in
    the crock, it's just melt-in-your-mouth - and after cooling will slice like a
    dream for sandwiches.

    We do this every year.

    I love Corned Beef.... I made the mistake though of cooking it when my wife was 3 months pregnant with our first kid...

    That smell that we all love wafting from the stove... makes her sick to this day. Now it is tradition that when she goes out of town, I make Corned Beef and eat it till I can't any more.

    We have crock pot.

    Your post makes me want corned beef.

    Must try corned beef in crock pot... DROOOOOOOOOOOOOOOOOOOOL!!!!!!

    I'm no good in the kitchen (yet)... could I possibly ask for a few more specifics on how you did it? pleeeeeeeeeeeeeeeeeeaaaaaaaaaasssee???

    As good as the corned beef was the corned beef hash was about 100 times better. I'll make it again just so I can make the hash!

    Oh man I love corned beef hash. There is a breakfast place down the road and their corned beef hash to die for. Mom and pop family style home cooking place. I'll take a pic next batch :) :)

    It's actually SO EASY. We buy the corned beef package that comes with the little
    packet of spices - I think MOST come that way - I've never seen one without.

    We just put the beef in the crock, and about 1/2 cup chopped onions, 5 or 6 cloves
    of MINCED garlic (more or less as your garlic taste goes!), 2 large bay leaves from
    our garden (for a cheap source at the grocery store, DON'T look in "spices" - go to
    where they sell Mexican foods - MUCH cheaper, and MUCH fresher!!), then fill
    the crock until the beef is JUST covered almost - leave the top above the water,
    and sprinkle the spices packet on top - it will slowly drizzle into the beef over the
    course of the day. Then we toss in 8 or 10 BABY red potatoes. Put them in
    whole or they'll go to mush. For firmer potatoes, toss them in at the 5 hour mark
    or less - depending on how firm you want them to be.

    Needs to cook at LEAST 10 hours on LOW - 12 is better, but not as convenient.
    Don't be tempted to use MED or HIGH setting - the meat will cook faster but will
    be tough!

    If you want traditional cabbage, take a head of cabbage and break it into wedges.
    Stuff those in around the sides of the beef 30 minutes before dinner. DON'T LEAVE
    THEM IN ALL DAY - they'll be MUSH!!

    Then put on The Chieftans and be Irish for the evening :D

    And of course, to put the Jewish spin on it, make sure to have some good Jewish
    rye on hand for the next day - with fresh GOOD mustard for corned beef on rye
    sandwiches - put on Matisyahu or Klezmer music and join the tribe for lunch :D :D

    YUM!!! Geez... Now I want corned beef again - this made me HUNGRY!!!!!

    Thanks Jedi. Will have to try this soon. Costco has a corned beef that I can buy... maybe will try this weekend.

    Used Jedi's method of slow cooking on low in a crock pot for 10.5 hours.
