One more thing to add on the cast iron method... cover your smoke detector with plastic bags + rubberband!
I should really add: Go with the ribbed cast iron grill pan when cooking bone-in cuts and the flat for all others......
Man you guys got some great plates there... No pics, but I've been making myself a steak nearly once a week now, trying different preps, cuts, etc. I had a ribeye that was to die for last Saturday during the USA/Eng World Cup game... have really fallen in love with these cuts that we call "Steak." -Colin

The best cast iron pan is the one your grandmother had. If she doesn't have one, or you missed out on it, garage sales are a good resource.

Holy jeebus! How did I miss this thread. Subscribed! I've never seen the cap for sale. Grill 23 in Boston serves a Kobe cap steak. Wife ordered it last time we were there. That was fan-freaking-tastic. Second best steak I've ever eaten out...T
