Went to In-N-Out for a grilled cheese, apparently they were too busy they got my damn order wrong. They gave me a cheeseburger instead even though they confirmed like 10 times it was a grilled cheese.

Oh well, at least it's a good burger :)

why the heck would you go to In N Out for a grilled cheese? you can make those at home for like 37 cents. In N Out is for burgers ONLY!!!!

Eating some Velveeta Shells & Cheese & drinking a Coke Vanilla

I was going to just toss the sauce packet and add some Newman's Own Alfredo sauce, but just used it since I didn't want to keep it for something else.

Meatloaf, baked potatoes and a medley of baby carrots, broccoli and (for my daughter) the dreaded cauliflower.

Wine was a brachetto ' acqui, bought on a whim. VERY lambrusco-like!

Went to a local Mexican restaurant near me again. Got cheese enchiladas and for dessert some fried ice cream

For some reason, I don't like shredded chicken, and that's what most restaurants use.

Takes a little patience to prepare it right. Just have to add spices & water or broth [I prefer ice cubes] time and again to leftover bird while you separate chunks into fibers so it doesn't drown before reducing, but softens and becomes infused with enough flavor. Then, mix up some adobado sauce, reduce . . . add chicken & mix like a mofo. Ultimately, what you have is less "wet" than Cochinita Pibil or Machaca. Like it's shredded 4-legged barnyard pals, it's spectacular in enchiladas or tortas.

Last night I wasn't going to eat anything, but felt a little hungry so I threw beef and cheese taquitos into the oven.

Chicken ala creme. With pancetta and morels. Not the healthiest meal but oh my goodness was it good.

I've been cooking a ton the last few weeks. Steak Diane, Veal Cannelloni, Pulled BBQ Pork, Stuffed Pork Chops, Char Sui Bao, Chicken Cordon Bleu, etc.

And I've been riding my bike a ton also. Lost 4 lbs last week, so it's all good.
