    Sliced London broil over field greens with pesto vinaigrette and parmigiano reggiano curls, with roasted multicolored potatoes and garlic. Salice Salentino was the red.

    I miss that, and the fried pork lumpia. I had fresh vegetable lumpia ( roll ) the roll like
    very thin crepe.

    They really were...

    I did something I've never tried before and it really worked...

    Instead of the breadcrumbs I mixed in crusted French bread soaked (and wrung out) with milk. Light and fluffy! :D:D

    Apparently that's old school..... :)

    Very old school.

    How did you stuff those?

    I make meatballs with ground beef/veal, chorizo (not cured, Mexican works well), garlic, onion, olive oil, breadcrumbs (sometimes don't even need these), S&P, paprika and red chile flake. To stuff these I take a sheet of aluminum foil and fold in half width wise, lay out of mat of meat gloop, then in the center put a row of stuffin' end to end. Roll up like a sushi roll, cut or pinch off into your appropriate size and roll to make a ball.

    Easy way to done lots of small and medium meatballs.

    Half and half beef and pork, salt and pepper, fresh basil, garlic, parm, Worcestershire, milk-bread and eggs. Rolled in breadcrumbs and browned, then covered in the sauce and baked at 350, for 45 min with more basil, fresh parsley and Buffala mozzarella on top....

    They were a little soft so rolling them in the crumbs has to be done delicately.

    Sauce was crushed tomatoes, olive oil, sauteed mushrooms and onions, red wine, red wine vinegar, ketchup, sugar, s/p and garlic...

    I left out the heat this time....

    My wife made homemade chicken soup. I asked her if the the chicken had a little space suit on it because the soup was out of this world.

    How long did you cook them for and what temp setting on your stove? I have a great recipe for a lobster and truffle risotto that typically makes too much and I bet these would be amazing.

    Start with nice, cold left over risotto. As the pic shows, I dust a board with flour, stuff the ring mold, pick up some of the board flour and lightly cover the top, the put a water glass slightly smaller on top of the rice and lift up the mold. I then 'push' some of the board flour around the perimeter of the cake.

    I use a neutral oil, poured enough so it will reach halfway up the cakes. Over medium heat I slip the cakes into the oil via a slotted spatula. Because they spit a bit when first placed in the skillet I use a oil spatter cover for the first few minutes on each side. It usually takes 3-4 minutes per side over medium, or gently shake the pan-if they slide usually they're pretty nicely browned. You can always do the second side a bit longer than flip back to the first side for more browning.

    I line a cookie sheet with a few thicknesses of paper towels and keep them in a preheated 200 degree oven if doing a bunch. Blot the tops with additional paper towels before putting them in the oven, and salt them at that time as well.

    Its a standing invite, Mark! You guys should make a trip down this way, some great roads, some good activities and I can always arrange great food

    The trade off I had to make was stop drinking, I'm almost back to in shape weight :p

    Last night had some Fesenjoon, a pomegranate, walnut and chicken stew. Very good.

    Last night had Sabzi Polo with koofteh. Pan fried Mahi with herb rice with herb souffle.


    Tonight will be Rhemeh Horesht, lamb and beef stew with apricots, plums and split peas.
