    i like softer cheese as well but for me an original parmigiano reggiano is still one of the best.

    and you must try Kerrygold Irish Dubliner Cheese!!! they sell it at costco or trader joes..have it cold or what you can do is warm it up just a little and it taste amazing!

    Their Lapsang Souchong Black Tea cheese is also tasty. It has a touch of smokiness to it.

    Just came back from the UK couple of weeks ago, we were close to Cheddar gorge, so we had a 10 year old Montgomery Cheddar - outstanding Also Shropshire blue, excellent with some Madiera and or port... My favorite are still Livarot & cider...

    La Tur is a tangy, creamy one from Northern Italy. We try to offset the tang with evoo and dried apricots. Wonderful cheese that seems to be everywhere.

    I tried one that sounded bad but somehow really worked well. Coconut Gouda. I didn't think I would like it at all but it was great.

    My wife is always picking up this stuff at whole foods (I won't go there b/c I'm too cheap) called Robusto-I think it's a type of Gouda? I'm not a huge cheese fan but it's great stuff
