    Actually I think things are starting to turn a bit the other direction. Yes, carbed Ferrari are just like any carbed ICE vehicle, but carbs and even ICE to a degree are becoming rare creatures. The average shop working on modern cars doesn't seem to do much other than swap parts out.
    The OPs man is the sort I'd like to have work on my car.

    Last month I sold my 66 vette. To be a nice guy, I took it to a national chain store to change the oil and tune it up. They certified it, changed the plugs etc, but could not confirm carb settings as they only do fuel injection systems. Ended up taking it down the street to a hot rod shop who were able to complete this part. So yes, carb mechanics are becoming somewhat of a dying ventura breed.

    I've owned my car for about 15 years now, and was in the "any guy that can turn a wrench can work on a Ferrari" camp for a very brief time. Wait until you've had a body shop that's not well versed in your car, rebuild your window mechanisms. The cable mechanism can be a bit tricky and if its not right, good luck rolling your windows up and down. I also had a shop change my timing belts, only to have to pay for it to be done a second time, by someone who knew what the hell they were doing. Luckily I shut the thing down in time, and didn't have to buy a complete engine. Remember when things go wrong in these engines it can be catastrophic. Not like my Ford, if I break a timing chain no big deal.

    So through the years with all the cars and owners that are out there, and now you think your the first one to think you've stumbled on to a big secret, sorry. :) If what you say were to be true, every high school kid that can afford a Honda would be driving a Ferrari. It only takes one mistake to totally destroy your car.

    Not to say there are not certain tasks that can be done buy just about anyone. But with the availability of parts becoming more scarce and expensive, are you willing to take the chance. I've done allot to my car myself, but when we crack open the engine? I leave it to the experts. Just my two cents.
