    Now that was something that my dad did on a little Coleman camping stove when I was little. He'd make the bacon first and then fry the eggs and potatoes in the grease.

    Always delicious and you always left thirsty. :D

    When we were kids, my mom would make bacon and eggs every now and then on a weekend. We'd fight to sop up the bacon grease with our (already buttered, mind you!) toast. Good Lord, it's a miracle we didn't need quadruple bypass surgery at 8 years old!

    I am going to do my best Darth imitation and do a tri tip. I'm thinking 135 for 3 hours in the water. I haven't decided yet whether I'll blast it on my grill or do it in a cast iron skillet. I am leaning toward searing it on the grill just a couple inches above hot coals. Thoughts??

    Nothing beats a cast iron for the crust. I've had good luck with the grill but it's hard to top the skillet method.

    Plus, you can go full Darth and start a grease fire.

    Wow, that went well. No grease fire, but that really worked well for nice beef sandwiches. Seared the meat over coals; probably about 1/2 inch above the coals. Next time I'll use the cast iron.

    Love this thing. Tossing a knob of butter with a couple cloves of garlic into the cast iron, flipping every 30 sec or so, and basting the other side is excellent (credit to seriouseats.com for that one)

    +1. I've been working too much to have time to use it lately but this won't last for too long. By the end of March or so things will slow down. I still have a chunk of prime rib and some prime New Yorks in freezer I need to cook up. I am hankerin for some good sou vide beef. :)

    Thanks! Yes, I fry up the bacon and cook the beans in the grease. I toss a cup or so of water in and put a lid on to help steam the beans so they're not too greasy.

    Looks great! How did you sear it?
