No decent Mexican restaurants here. Thinking of tackling my own soft beef tacos tonight. Its either that or wing night at the local wings place and beer.
The guy from Texas votes beef soft tacos! Shocking, I know. Saute onions. Set aside. Brown ground beef in cumin, chili powder, garlic powder, S&P. Mix with the sweated onion. Put into a good flour or corn tortilla. Sprinkle on a little cheddar, your fave hot sauce. Fold taco. Open mouth. Insert taco. Chew. Repeat as necessary! T
Those look good, especially with the jalapeno slices on top. Wife bought cauliflower rice @ Costco. Apart from adding cream, butter, etc. - which diminish the potential nutritional gains - to mask the cauliflower taste, I could not come up with a good recipe...T
The tough part is finding the tortilla's. Mostly they sell them in the bread isle at the grocery store and they are made elsewhere. But otherwise, above is the plan.
Store bought tortillas have improved in quality lately, but we're pretty lucky in Texas, you can find great tortillas in just about every bodega in the Metroplex...T
Funny- you read dog expressions well!!! We cleaned up in about 20-30 min - you just put a bucket of soapy water in the skilllef and lightly scrub and drain- then a bucket of clean water behind that - not that bad if you don’t burn something in it
This rice was chicken flavor I believe. And I had a different one the day before. Something like 50 calories in the whole bag and only like 5 carbs. Birdseye makes a frozen garlic mashed cauliflower that is really good. Give it a try. It'll probably surprise you.
I mad some fairly quick beef stew the other night. Have been eating leftovers for a couple days now. Perfect time for it, it's been down in the 20's here with a touch of snow. I'm ready for spring.
OK, only two beers and a few wings. Took my brother. Its 20's here too, a little snow on ground. I'm done with it..... I hate winter.
It was almost 70 F yesterday morning, down to 32 F by the end of the day! A hot bowl of soup, stew or chili would hit the spot right now. T
I shouldn't have complained about the weather. Cause its now snowing out............. I have a house guest tonight, my Mother. My father got stuck overnight in Seattle. Mom is on oxygen and we don't want her alone. Power might go out, etc.. I'll take her for fish n chips.
Fish n chips was a success..... My mother is still over and she is making fried chicken. Its a treat cause normally I only get my moms cooking for Christmas dinner

Oh goody, its snowing again. I think I'll grab a beef taco pizza for dinner from the chain place up the road from me. The owners run the franchise I go, so its usually top notch pizza.
Indian inspired chicken, rice & lentils. Chicken wings & drumettes (for Mrs. Fancy Pants, who won't eat the winglets! ) . First, simmer lightly in water until cooked. Ca. half hour. Then, throw in a frying pan & poach in masala/water mix until mixture is reduced. We (meaning the wife) chose mild butter masala. Third, foil lined pan - into the oven about 2 or 3 mins under the high broiler. Dinner was left over pizza.... I'm mostly going out for dinner this week. More of a get out of the house since its still snowing/winter here.
^ I'm the opposite, when the weather is cold, rainy, dank, etc., I like to hunker down in the house & cook. Soup, chili, stew, etc. Today's dish. Grandma's chicken leg soup. Celery, onion, turnip (she used carrots, bu turnips have less carbs). Spices. Sweat. Throw in three drumsticks (grandma used 2, but I threw in an extra one for my furry, four-legged partner in crime!). Cover with water. Simmer.
