    You guys are rocking the Mexican food. The only thing we make are basic tacos. Pretty pitiful when compared to this. Love Mexican food so we need to step it up and try cooking something.

    It's 35F with 20-30mph wind. Kinda chilly. At least the sun is out.
    Think it's time for a big pot of chili this weekend. Snow on the way Sat/Sun.

    Chili is an excellent plan for that kind of weather.
    Gonna be cooler over next few days. Chili would hit the spot.
    Just wish Kroger would put chuck roasts on sale!
    I hate paying $7/lb when I can get it on sale for $3/lb

    Think we’ll do buffalo. Either Wegman’s or a small buffalo farm north of us. Who would have thought... a buffalo farm in Maryland.

    New york strips! I normally bbq but with the cold weather I'm going to try pan tomorrow.

    We got about 2 inches of snow and -5 again.

    Do you have a food dehydrator? I am drying a large bunch or parsley currently (and lots of other things) to preserve it longer. Or you can Juice it or blend it with some water and freeze it in an ice cube tray, for individual serving sizes.

    I've got a little something to say as we hit 2019...THANK YOU!

    Thank all of you!

    I never really knew how to cook before...well I was not a good cook. As I got out of my comfort zone, and read this thread, I knew I could do it. For anyone just reading this thread give it a shot! You never know what you can do. Worst case you order some pizza after a messed up one and find out what went wrong.

    Today I tried something new. I always BBQ my steak. I set aside my strips with some Montreal seasoning and other additions. With the cold weather I tried pan for the first time with steak. I also took some potatoes and made some awesome smashed red potatoes with the skin on.

    It's so fun just to try new stuff and learn. The tasting was quite good on this one.

    Simmering. Need to add water.
    Homemade beef stock. Turnip. Onion. Celery. Bell pepper. Spices. Simmer.

    For dinner tonight, I too am trying something new. Wife bought an eye of round at Costco. Googled a recipe. This came up.

    Crazy. Heat oven to 500. Turn down to 475. Put in roast. Scorch it for 21 min. Turn oven off and let it sit for 2.5 hr in the oven.
    Sure, why not.

    OK. Got an hour to go. Temp stalled at 133 F, which would have been OK, but that's rare and the missus would freak! So, I have oven at low temp of 200 F. Trying to get to 140 - 145 F, medium rare. We'll see!

    I've seen his video on butter basting steaks in CI pan, but not the bit on mushrooms and potatoes. Despite his theatrics, I like Ramsay's videos. He really does a good job on both the style and substance.

    I started watching Gordon Ramsey At Home show not long ago, I think on amazon prime. Great show where he actually talks and shows technique and such without any of the Hell's kitchen type theatrics. Very mellow, very real. Great show and he has some really tasty looking recipes and shortcuts.

    Working again today so grabbed some teriyaki chicken and teriyaki chicken spring rolls on the way in this afternoon.

    Totally agree. Once you get past the theatrics, Ramsay is a great chef and a great teacher. His video on chopping onions has made my life easier since we seem to go through onions like crazy around here! :)

    Good level of doneness. More than I would have liked. Wife enjoyed it muchly though. Amazingly consistent doneness from middle to ends.

    Above is an end piece. This is a middle slice. Served it with horseradish and the jus from cooking. Tender - ambassuming from the cooking method, plus it was prime grade, although I'm not sure how that works for such a lean cut.
