My dad used to make omelets out of left-over chop suey all the time.

Scrambled eggs with red onions and smoked salmon. Plus American cheese mixed in. Tropical Pepper Co habanero hot sauce added later. Good for a cold morning.

Eggs fried hard with the same hot sauce above. Gluten free / cardboard toast. Eggs were tasty... fuel for quality time with my wood splitter.

Yummy. I think Mrs. T might like that, sans hot sauce of course.

    Gluten free toast?

I’m not eating it now, but making for a dish for later. I’ve been preparing in the kitchen for making pemmican. Knowing we all love bacon weaves........

Foreman grilled bacon weaves stacked, cooked, then separated. 1 lb. the grease saved for the pemmican. Image Unavailable, Please Login

1 lb. filled the grease catch try to the top.

They make a nice bun for someone that cankt eat breads. Or can be cooked on top or below a burger, or hash browns in one. Have a great weekend y’all. Going out to shovel drives.

Yeah... pretty terrible. Wife wanted to try it. Figured we'd suffer thru it instead of instant trash. It does carry butter and jelly.

Well, I didn't venture into the gussied-up hashbrowns...ordered the plain ones as part of the "All Star Special" (all of that food for $8.90). I did take the runny eggs and cut up the sausage and put it on top of the hashbrowns and make it essentially a yokey-hash. Was pretty good. The waffle was excellent. It was Ania's first time at Waffle House...it was packed as you would expect. Great real American experience for her. We liked the place. (oh, nobody warned me they would not have cholula...the horror of eggs/hash without it was the only bummer of the breakfast)

Yesterday morning was - on the other hand - a fantastic local, owner-operated breakfast cafe, Alo Cafe in old town scottsdale. Fantastic place, recommended if you are ever in town.

I had the "Chicago" omelet with hot link sausage inside along with cream cheese and topped with a spicy fresh salsa verde. It came with excellent crispy hashbrowns and a side of bacon.

She had the "Brie honey ham" Omelet, with brie, fresh herbs, and honey-baked ham inside. It came with "Kringle" bread from Estonia that made a very good (and different) french toast when topped with butter and maple syrup.

In college, Waffle House was the go to place to eat after a night of imbibing. Being starving students, we'd share a large order of "all the way" hash browns...T

I bet, I wish we had one close to my college, would have been there a fair bit. This one is on University Drive in Tempe, so 75,000 college kids keep the place busy!

    Big breakfast today;
    - Omelet with chorizo, potato, green onion, cheese and sour cream
    - Hash Browns
    - Crispy bacon
    - Buttermilk biscuits and honey

I’m still full 8 hours later..omelet was as delicious as it sounds :)

Ener-G is one of the better g/f bread products I have used. Nothing is like wheat bread in its entirety, but close enough for those who can’t have it, I suppose. And not close in texture, but not like a bland brick either like some other brands. Potato flour or rice flour just makes things denser, heavier, less airy. Some crumble too easily and don’t hold up. It isn't easy, so I tend to not use breads after so long searching for the one and not finding it.
