I live in Southern California and in the old days when I got a new car I would remove the thermostat and junk it. Not really needed in California..

Is there anything special about the Mondial coolant circulation system that would make it unwise to just remove the thermostat?

YES - MEGA UNWISE! The thermostat in this design is a 3-way valve -- it both opens the flow path to the radiators and closes the flow path for recirculating inside the engine. If you remove it, coolant will just recirculate inside the engine and overheat. See the coolant flow figure in your OM..
