    I've never seen liquid dripping out the bottom vents, but DFW ain't Hawaii levels of humid. Could it have been juice, dripping from the meat?!?

    Your idea to minimize the time that the lid is open is a good one. I have two side tables, like in the pic below, and they are handy to get things positioned for quick on /off the grill.

    It was water! I have the side tables too but I was cramped. Beginner working space management!

    Oh boy! I never had a Weber that was air tight? or super insulated to allow for slow use of the fuel...do they make such a thing?

    Best I ever had! I am feeling good about it!
    Costco St Louis Style pre rubbed ribs cooked at 225
    3 hours I had upper and lower racks filled meat side up
    2 hours wrapped tight with aluminum foil meat side down with some apple juice splashed on
    1 hour with foil off and meat side up. I decided to make them less plain by rubbing some honey and bbq sauce on for the last step.

    I am getting hungry again.

    Not that air tight...but close enough to allow for control of temps to within a couple degrees and stay that way for a very long time!

    Wow that's great, food looks great,. As soon as I sort out my Dino, finish 1200 ft of carpeting, get the drive way redone, and have the roof section fixed that I got screwed on, ill have a big green egg on the rear patio, and the first thing ill make is green eggs and ham ala Dr. Suess,,, with My Green Egg !!!!!!!!!!!!!!!!!!

    No grill storage. Your grills are like your F-car. The more you use it, the better it runs!

    I would think a charcoal grill would be less sensitive to ambient temps than gas.

    I use almost all of my grills - I think it's holding steady at 10 - all of the year. Except the gasser, as it seems to not generate enough propane pressure during the winter to get super hot. So, I rotate in a Weber electric and my old Smokey Joe during the winter. I probably grill more in the winter than summer; of course, TX winters are mild and summers are torrid in comparison to MA.

    Yummy. Those look like flanken style ribs. If you can find a Weber rib rack to hold them upright. Baste those in shoyu, with the plate setter in place and you got yourself the closest thing to pipikaula beef this side of the Hawaiian Islands!

    As T said, no need to store them. I use ours in all seasons. It does live under a roof overhang so it’s not in weather constantly. No grill cover.

    Mine is out in the open, albeit in the shade of some old growth pecans, but our weather is mild. I would recommend getting the BGE cover, if you don't have something like a covered patio and grill all year!
