    Brisket flat was just for fun, turned out good. 3hrs in smoke, then foiled in oven for 2hrs, rest for 1hr and then under broiler for 5min per side, pour the dripped juices back on top.

    Nothing says holiday dinner like tacos;

    - Salmon with siracha slaw (in the flour tortilla)
    - leftover filet mignon carne asada (in the corn tortilla)
    - black and refried beans and spanish rice-a-roni

    Can you tell me we’re burned out on cooking? :D

    It was so tasty... From the wife:
    Scallops coated with Panko bread crumbs, garlic salt, pepper, red pepper flakes.
    Added shrimp when turning over scallops. Added garlic and shallots.
    Added Sherri to simmer.
    Angel hair pasta, butter. Parsley.
    She said she winged it!

    Last night of the family holiday gathering, so we used up what was left in the fridge; grilled the last of the filet mignon, the last of the Brussels sprouts, etc. Added some Cajun spiced shrimp. Drank the last of the Bordeaux I had shipped in. Was a great family holiday, driving my mom back to Reno today, flying back to London tomorrow.

    Lordy you do pork chops better than I’ve seen. When I get back to where I can have a grill again, I gotta try that.

    These are all inspired from a steakhouse in Corning, NY during track days with my 360C at Watkins Glen. Think it was Tony R’s. They did a monster chop. Awesome. Never thought about a really think chop until then. Now it’s my standard chop. Great memories... Watkins Glen and the local scene. The track is fantastic!

    Edit: We took our dog inside during one visit. She laid quietly at our feet during dinner. Perfect. The piano player was rather obnoxious and loud, but we made it through.

    I'm going across the street for an overpriced bacon cheeseburger at Cactus Club Café. Skipped dinner last night, was still full from a late lunch. Maybe after new years I'll head back down to Vegas for better food options.
