I've done the corsa pilota with the pista this last summer so I do have some high speed track time with it. The cars are very similar in speed and handling. They get there is completely different ways. I am faster in the pista(around a track) in general mainly because I know how to drive 458/488 much better than the 720s. 720s has an open diff which takes some getting use to. They are both awesome cars, but the 720s is faster above 100mph. It just pulls much harder and knowing mclaren the car is built much more recklessly. I feel the pista starts limiting its power above a certain point to save components of the car. Also the pista is a more raw driving experience than the 720, computers do more in the 720.
You are probably feeling the extra drag of the Pista, due to its track focused aero. Would be interesting if you strapped a V-box on both of cars and see what the numbers say.

I drove 720s and Pista back to back today. I must say the Pista is just violent brut force power and joy! Love them both for different reasons. I will say the pista is just a strikingly beautiful car in person.
