See thread below. I "invented" this because my wife likes her egg yolks well set, but does not like brown bits - Maillard rxn - that go with a well cooked egg. throw in some water? What, what, what? That sounds so weird...which means of course that I gotta try it! From a quick google search, "basted eggs" turns up what I expected when one hears that word...basted with butter like we might do to a pan seared steak. It seems some "safe egg people" have commandeered the word to describe their "steam basted egg" technique. Hmmm...I think I'll try both butter basting and water/steam basting... Question - does the water completely evaporate out of the pan, or is there still liquid when you pull the eggs out?
I know you love your eggs! Your refinement of the distinction between basted & steam basted corresponds to what I have also read. What I call "basted" is closer to what I have seen under "steam basted eggs". To answer your question - it works best - for cleanup & such - if the water does not fully evaporate, but does not cover the egg completely. For the latter, my wife likes a half-slice of American cheese (yeah, I know!) on her egg and if there is too much water, it can become a soupy mess. To extract the egg, I use the mother-in-law's old Batter Beater, and let any water drain off before plating. It's like a fish turning spatula, but slightly thinner tines. Pic below pilfered from Ebay. I pull them off when the egg yolk looks firmly set, then put on a half-slice of cheese, cover with a lid, and let the cheese melt while I finish up other things. Over the last year or so, we'v enjoyed smoothies for breakfast. Yogurt, protein powder, fruit (berries or banana, most typically), a pinch of matcha green tea powder, water. Sometimes add something antioxidant or anti-inflammatory like ginger, turmeric, etc. Blitz with a stick blender. Yummy. A cup of yogurt with low-carb granola in the late AM, and I'm good to go until near dinner time. T
