Ania came home today with some fresh zucchini blossoms and a ricotta-like Italian cheese and said we should figure out something to do with them. So we found a recipe online and made stuffed squash blossoms. Made a stuffing mixture of ricotta, parmesan, chopped basil and oregano, and egg yolk. Dipped them in a light batter of tonic water (we didn't have any soda water) and flour. I've fried maybe twice in my life, so we made a giant mess in the kitchen We had some nice tomatoes and basil from the Italian Grocery, and then used the leftover stuffing to make some baked cheese toasts. Pizza night again (our third attempt). Fun and pretty yummy! The dough came out pretty different from last time. It wasn't nearly as springy tonight, it was firmer and thus I had to roll it out. At least one of them came out sorta round this time Mine had sausage, onion and olives and a bit of fresh mozzarella - in addition to the base of tomato sauce and shredded mozzarella.
