    Ania came home today with some fresh zucchini blossoms and a ricotta-like Italian cheese and said we should figure out something to do with them. So we found a recipe online and made stuffed squash blossoms. Made a stuffing mixture of ricotta, parmesan, chopped basil and oregano, and egg yolk. Dipped them in a light batter of tonic water (we didn't have any soda water) and flour. I've fried maybe twice in my life, so we made a giant mess in the kitchen :oops:

    We had some nice tomatoes and basil from the Italian Grocery, and then used the leftover stuffing to make some baked cheese toasts. All pretty yummy!

    My grandmother made that too! Only a couple of times as its a major ordeal and finding fresh squash blossoms is hard, unless you have a mess of them in your backyard...T

    Pizza night again (our third attempt). Fun and pretty yummy! The dough came out pretty different from last time. It wasn't nearly as springy tonight, it was firmer and thus I had to roll it out. At least one of them came out sorta round this time ;)

    Mine had sausage, onion and olives and a bit of fresh mozzarella - in addition to the base of tomato sauce and shredded mozzarella.

    Her's was Margherita, with tomato sauce a bit of shredded mozzarella, then a fair bit of fresh mozzarella and topped with fresh basil.

    Lol. I was curious how you pronounce it.:D

    Just got home from and early dinner with my parents. We were the only ones there (4pm), as we left two cops came in to eat and there was a lady picking an order up. I used to frequent this place once a week before the virus. It was sooo good.

    Homemade lox. It's more like salmon jerky. Should have tried a taste last night. May have cured faster than the 48 hours specified in the recipe, as it was a pretty thin piece. Soaking in cold water now to desalt a bit.

    On a slice of beer bread, cream cheese, dill and fresh cracked black pepper. Not bad. Not very smoky, but decent intensified fish flavor.

    Made a batch of beer bread. Find the MIL's ancient sifter. Definitely lightened things up. Also, tried to incorporate the beer into the dry ingredients with the minimal amount of mixing, so as not to overwork the batter/dough.
