Doing some research on detailing my 360 engine bay, it seems a lot of people suggest WD-40 Silicone spray. Looking at the side of the can it cautions that it's very flammable. Is this safe for the engine bay - obviously a high temperature environment? I don't want to end up another flaming Ferrari Instagram story.

The propellant may be the flammable part of the spray. Once applied, probably not?

I have used WD-40 on engines for years and years, both car and motorcycle. No problems yet. As an added bonus to the clean shine look, it makes things much easier to clean next time too!

Sounds like this discussion is confusing two different products:
    WD40 Silicone Spray https://www.wd40.com/products/silicone-lubricant/?specialist=GoogleBrand&gclid=EAIaIQobChMI77fn1Z_a6QIV7x-tBh36NAIjEAAYASAAEgLsjPD_BwE
(this appears to be a general silicone spray, just labeled under the WD40 brand)

And "traditional" WD40 lubricant spray https://www.wd40.com/products/smart-straw-12-oz/

A quick google search shows that silicone spray is commonly used for detailing engine bays after cleaning.
Personally I don't use anything, as I find most detail sprays attract more dirt, making engine cleaning more frequent.
If I use nothing after cleaning, future cleanings generally require nothing more than compressed or, or a simple wipe down with a damp rag after car washing.
