Looks like a nice slab of fish. I thought terror was kind of meh the first time I did it. Pan fried as well. Next times, I grilled them whole, and then after that as filets, over wood/charcoal fire. Much better with a hint of smoky flavor. Try them on grill next time? T

Thanks. I stumbled upon the Serious Eats recipe, as I was looking for something to do with the short rubs than the traditional braising methods, seeing how it was wagyu. It was about 4 or 5 min of flipping the meat around over a hot fire, to get a good char on all sides, then about 5 or 6 min over the indirect part of the fire. Remove carrots, reduce liquid until a syrup. Add carrots back in, mix. This was the mother in law's favorite side dish...T
