    I went with the 10 1/4
    Good size for most of my breakfast needs. I’ll go bigger for dinner applications if it works well.

    Tom, you cleaning your pans how? I just use a stainless scrubber, scrub out anything and dry. Sound familiar? You know, looking at the Blu pans I wonder if the handles are too high and a little long. Carbon steel still isn't light and I wonder if they are too heavy with those handles? anyone own one?

    Rinse with water. Polycarbonate scraper. Paper towel wipe down. If anything remains I have a few old Scotch Brite pads that have never seen soap. If there is detritus really stuck on there, table salt and a paper towel, and scrub.

    Always rinse very, very well at the end. Dry on stove. Thin coat of vegetable shortening before putting it back.
