    I was going to have left over Chinese, but I ate that for lunch. Its going to be either Fish N Chips or sashimi and rolls. Also maybe tacos.

    I ended up doing fish n chips................. Did take out and their menu is different. Still built my platter from the take out menu. Added three oysters and three shrimp to my halibut.

    @tomc - thanks so much for the chili info. Following is what I synthesized from your posts and a tour of the web...will be doing this on Sunday...


    Ingredients:
    · 1lb Chuck roast
    · 0.5lb Ground beef
    · 2 Adobo chipotle chilis (optional)
    · 3 cloves garlic
    · 1 Onion
    · 5 tbsp Williams Chili Mix or
    · Mix of 1 tbsp each of chili powder, cumin, brown sugar, garlic powder, onion powder
    · 1 teaspoon dried oregano
    · 1 teaspoon smoked paprika
    · Pinch of cayenne
    · Salt and Pepper to taste
    · Corn flour (optional)
    · Olive Oil
    · 1-2 15-ounce canned crushed tomatoes in sauce
    · 2-4 tbsp tomato paste
    · Beef broth 1-3 cups
    · Beans (optional)


    Steps:

    1. Freeze and partially thaw the chuck roast, then cube while still partially frozen
    2. Toss the cubed meat in maseca (corn flour) seasoned with salt and pepper
    3. Brown cubed beef and ground beef in a bit of olive oil with finely diced onions and garlic
    4. Drain off fat if required
    5. Add spices
    6. Add adobo chipotles
    7. Add tomato paste
    8. Add Tomatoes
    9. Add beans if desired
    10. Add liquid (beef broth)
    11. Simmer for 6-8 hours

    You know it's good when the missus doesn't grouse about this level of doneness. Akaushi tenderloin came out perfect. Literally fork tender. The rib eye was pretty good too. Ton of leftovers ; fortunately, the pooch was happy to help in that department...T

    Thanks. I know! Not even a mild grumble. The akaushi is from a company in Texas, mid way between Houston and San Antonio. Apparently, Kroger is now carrying their steaks...T

    Typically, you get have a piece of wood that has a smoke scent/flavor you take a little blowtorch to it and when it starts to smoke, you put a glass over it and the glass will fill with smoke. Then, you can either pour the ready made cocktail into the smoked glass OR you can place it over the cocktail and lift it when you’re ready to drink it. Here’s a video of the one I had last night. I uploaded it for you.

    Here’s a YouTube video on it. I’ve been afraid to try to smoke them at home. I’m the person that would need to call the fire dept.

    It’s tilted.

    Zuppa Toscana. Inspired by the above recipes. This has a bit more simmering to go. Doubled the amount of garlic. Added some garlic powder to kick it up an extra notch.
