    My dads craving seafood udon. So we are going out for Japanese tonight. Limited seating, it might turn into take out. Depends on how busy they are.

    Thanks. I actually had some for lunch, just like a salad!

    A couple of things I learned...
    1) Rob was right, of course. It needed some sweet. I added brown sugar as that seemed the best option among what I had in the pantry.

    2) The amount of oil I added (EVOO) was much less than indicated. I added everything else first (excepting brown sugar) and then kind of stirred and eyeballed it until it seemed moist enough. As it sits in the fridge, it'll generate more liquid from the maceration process, so I thought it better to under oil rather than over oil.

    3) I am guessing that canola was to have a flavor neutral oil. I'm not sure how neutral you have to get though with S&P, jalapenos, etc. in there.

    4) Letting it sit in the fridge overnight was good in getting the flavors to meld, but it mellowed out the jalapenos a whole lot. It's gone from fiery to zesty to zippy! Since I was saving the seeds to dry for pre-spring planting, maybe that cut down on the initial heat. Next time, I am going to go all in on the peppers - seeds, membrane, fruit. Maybe think about using something a bit hotter to like a habanero, if I feel brave.

    Can't just rely on their flavor packets. They look pretty chintzy to me.
    I think if you added some additional shrimp or such, you'd have a winner w/o having to venture out into the covid zombie apocalypse...T

    Shrimp. Boiled it first, so I'd have shrimp broth for the pooch's kibble.

    Butter, olive oil & garlic in a wok. Once that was sizzling hot, and before garlic started burning, chucked in the cooked shrimp. S and P. Garlic powder for more garlicky goodness. Quick toss in the wok. Fished out the shrimp with a slotted spoon.

    The other reason I used a wok to finish was so that it would be easier to sop up all that garlicky, buttery, shrimpy goodness left over with bread.

    Something sort of quick and easy - garlic chicken and jalapeno pizza. Grilled the chicken breast first on the BGE, then set it up for doing pizza. It only takes about 10-12 minutes to cook the pizza but it seems like it takes an hour to do all the prep work! Anyway turned out great. One of my favorite things to make on the egg.

    I'll ask him about the flavor packets. He wants more, so must be good.

    Over did the rolls last night. Ordered, California, Dynamite, chopped scallop and Boston rolls. I ate most of the rolls plus my sashimi. The restaurant only has five tables going. It was too busy for dine in, so we got take out. Bella got a bite of salmon a few times. Spoiled her, still won't touch tuna.

    Tonight. Still have left over sauce from the other night. Doing spaghetti and meatballs again.

    Oh yeah. Forgot a big one! No way did I shredded up all that cabbage! :D
    I bought pre-made slaw mix from Kroger.
    It was good had red and green cabbage and carrots.

    First and last for me . They shucked the oysters an hour before being served. I called them out for that . The charbroiled was good as well as the jambalaya.

    That looks great!

    If you want to save yourself a little grief, look into Wewalka pizza dough.
    Comes out of Austria. Carried in the Kroger chain of grocery stores,
    and comes in both thin crust and regular thickness crust. It's quite good.

    Won't touch tuna?!? Odd. Our dog will eat anything that is meat, poultry or fish.

    OK, Max, this is for Dad. I took some of the extra shrimp broth last night. Costco shrimp BTW.
    Added S&P, garlic powder, fish sauce, miso and Tabasco. Poached a mahi filet in the liquid;
    mahi from? you guess it, Costco. Poured the liquid over the Costco udon noodles, covered and
    left it for about 5 mins. Added the fish flaked up. The last bit of the jalapeno cole slaw I had.
    Mixed. Let sit another minute or so.

    Oh yeah, I mixed in the "flake" packet from the Costco udon noodles. Near as I and the wife
    could guess, looked like green onions, seaweed, and daikon radish flakes.

    It was good! I'm stuffed! Make this for Dad, you'll be a hero...T
