    OK. I'm giving this a try! Most of it is in a baking dish, covered. About 2.5 hours in as of now. Couldn't fit all the butt into the baking dish, so this last bit is stove top simmering. I also chucked in half a dozen of these.

    Website says 30,000 Scoville units. Oh dear. Jalapeños are 2.5 - 8 K. Didn't seem hot last time I taste tested it. We shall see.

    This is the cut up pork butt that was in the oven covered. 3 hours at 400 F. Cumin, chili powder, S&P. It's cooking now uncovered.

    Stove top carnitas in a homemade tortilla. I reduced the juice in the pot to make a sauce. Shredded the pork and then crisped it up in a skillet. Put in a tortilla, added the sauce. Bit bland to be honest. Those arbol peppers ain't nowhere close to 30K SHU, and I think I needed more salt perhaps. Added a few dashes of Tabasco and it picked it up a bit.

    It should be bland and taste like pork, you add topping to make it mean as you like. Layer those flavors

    Was going to pickle some red onions and jalapeños, but never go around to it. That might do the trick.

    The co op store has T-bones on sale, so planning on getting one for tonight's dinner. Was going to use up the frozen chicken burger patties from Costco, but I'll do them tomorrow.

    So for the bulgogi recipe that a few folks asked for:

    I sautéed mushrooms, carrots, zucchini, sprouts, and tomatoes all individually and in sesame seed oil. You can add light salt to everything while you sauté it and put to the side.

    Instead of rice, I made cauliflower rice. You basically chop the cauliflower in a chopper until about the size of a grain of rice. Sautéed in the same pan that you used for the other veggies.

    Sautéed some spinach.

    I used ground beef for the bulgogi. Brown the ground beef and add salt. After brown, add the soy sauce mix which I had prepared earlier. Consists of fresh ground ginger root, garlic, and soy sauce. A pound of beef requires about half a cup of soy sauce and garlic and ginger to taste. Once cooked in the soy sauce mixture for 5-7 min, add spicy bulgogi sauce which you can buy in the bottle at your local grocery store. Be generous, approximately 3-4 tablespoons. Mix, cover and remove from heat.

    Fry an egg in the same pan as the veggies. Use some sesame oil to fry.

    Now arrange the cauliflower rice in the bottom of the bowl, arrange all the veggies in sections around the bowl.

    Arrange beef in the middle of the bowl and sprinkle with sesame seeds.

    Place the fried egg on top and sprinkle with green onion.

    Squirt some spicy Korean bean paste sauce next to the egg.
