    Great color, great consistency, good flavor. ZERO heat. Guajillo are supposed to be 2500 - 5000 Scoville. No zip to these however.

    Mixed the guajillo salsa with a little tomato paste, mozz + Mexican blend pizza, spicy Sicilian olives, meatballs, Italian dried herb mix. Bake at 425 F. This turned out very tasty.

    Today was a trip to a *lovely* part of town for some good Mexican grub, served in a patina of decades' old dirt. Love Carolina's! I wish I took a pic of the indoor dining area...its a 100% accurate version of the places I've eaten off the beaten path in Mexico...down to the cement walls, cement floor and cheapo black chairs and tables. Nothing has been painted (or cleaned) in decades one would surmise. Its perfect :)

    - Chorizo and Potato Burro (their best item imho)
    - Crispy Beef Tacos (greasy and yummy)
    - Cheese and Beef Enchilada (pretty good)

    I feel like Mexican now. Even though the only two Mexican restaurants in town aren't very good. Its been over a year since having good Mexican eats.

    Today's stop was a new-ish BBQ place in PHX metro; Naked Q BBQ.

    Impressive place, well-run, execution was good (only 1 miss out of the 8 things we tried - the ribs were a bit dry). Flavors were "mid-pack" as BBQ goes. Not bad, but not top-tier (will have to go to Little Miss BBQ here next week for that). Everything was house made, even the pickles which were excellent. The brisket was above-average. Turkey and sausage were solid. As I said already, ribs were sub-par. The sides were homemade and excellent takes on the classics. I will say I was very surprised that their their 2-meat/2-side/1 corn muffin plate was only $15. That's cheaper than anywhere I've been in the USA. (And this ain't a low rent district location and these portions were large, we had enough leftover for 1 more person-meal)

    My mom would actually go to the extra effort of making them in separate small dishes, so everyone (mostly me) got the exact same amount.

    Too bad it wasn't up to the rest of the meal. Done right, Nilla wafer 'nana pudding is the BEST!
    There was a place in some small town here that did it awesome. Unfortunately, they went belly up.
    There is a place in Abilene that did a pretty good banana pudding when we last visited about 2 years ago.

    I was alluding to AzIt 's banana pudding being not up to par.

    My aunt did a great Nilla wafer pudding. But, she did hers in a pie plate, so I had to fight my other cousins for a piece.

    Dang it. Now I'm hankering for banana pudding!

    Fried chicken attempt turned out OK this weekend. Marinated with spices and buttermilk - then added egg whites and Vodka to the dredge bath before frying.

    Ended up at my parents and took my dad for Japanese. Did tuna and salmon sashimi. Boston Rolls, Phillie Rolls, Dynamite rolls.
