    We were at lake hotel in Yellowstone.

    Crowds are absurd...

    BTW - speaking of Grand Teton Park, Jenny Lake Lodge dining room has hands down the best food in the parks. Very cool, even romantic dinner place.

    Ok, right, Yellowstone vs Tetons.

    In the Tetons we found all the “fancier” food in the park was basically the same - it all comes from the same vendor with the contract. What is very expensive at Jenny Lake is reasonable at Signal Lake.

    yeah, pretty much. "Back in the day" there were some young, ambitious chef's at Jenny Lake Lodge that actually seemed to care about what they were cooking, and the ambiance was really cool with real candle light only in that old log building. We would go up there late in the season for their last couple of weekends before closing as a destination just for dining. That is the only time I've ever done that in a National Park, and that was 15 years ago now...

    A few years ago during our only and last Jenny Lake Lodge stay we were expecting a really nice chef prepared dinner. The waiter came out and happily told us the chef was off that day. Our meal was the same we just had at Jackson Lake Lodge right down to the dinner rolls. Big letdown.

    Indian-spiced grilled chicken, curried corn and basmati rice last night. Was pretty good, although we used some frozen corn we had in the freezer and thus sorta mushy.

    Amazing! Try rounding up some sweet corn next time you're out shopping. Thus far, it's been pretty good around here. Much better than last year...T

    yeah, the corn thus far here has been on the (very) small side...but soon! Can't wait for corn season. We are only now planting gardens up here...very short growing season, so nothing out of the ground for over a month still. We get corn from Utah though...but even that doesn't get good for a while still...

    That spread sounds like one of the big buffets in Las Vegas. I think it was Caesars. You pay a big fee and the entrées and desserts are a notch above the usual chow. As I recall, they made a profit on me, as I cannot pack away the grub like I used to.

    Last night, we had to do dinner fast, because we were running errands all day. So, I microwaved this ribeye until thawed. Then 3" per side on a scorching hot skillet. Lodge 10" carbon steel skillet. Bacon fat to lube. Pretty good crust for indoors.

    Tonight. Smoked salmon on a homemade corn tortilla. Cream cheese base, smoked salmon, fresh cracked black pepper, dill, pickled serranos and red onions.

    Ribeye (I only ate the tail), trumpet mushrooms and an arugula, Belgian endive and radicchio salad. Made the non diabetics lyonnaise potatoes.

    And yes, you can see the reason why I rest the steaks on my plate…..

    Fried chicken and fries with gravy. Did the Mary Brown's place. Got the second dose of covid vaccine at noon. Feel a little sick this time and arm is sore around the injection site. Hoping being fully vaccinated will open up travel. I want to drive down to Vegas.

    Haha . Wish I could of wrote that ! But yes , now you can see why it's my favorite, and how it stays in business all these years . The grounds are amazing as well for a late stroll to burn off some of those calories !

    When we were young, on the occasions we had steak or beef, my brother and I would carefully partition the jus from the resting plate for our mashed potatoes. My sister thought that was "gross". OK, whatever, more for us!

    Got Moderna for the first dose. They ran out of Moderna for the second dose and only had Pfizer. Id have to wait a month or more to get Moderna. So I did Pfizer for the second dose. No longer feel flu like symptoms, just a sore arm at the injection site.

    One of my favorite food memories from being a kid was either that, soaking up meat juice on bread or even better, tomato salad. Just tomatoes, oil, salt and pepper (maybe a touch of basil sometimes). Us kids would almost fight over who got the juice to soak up on our bread. :)

    I'm having leftover Costco chicken and a salad tonight.

    Yes. The scarpetta soaking up the oil & vinegar is just as good!!! I now spoon up the garlic or drink from the plate!

    Homemade chili de arbol/guajillo/tomato salsa as the base. Jalapeno/serranos & red onions
    (yes, those are actually red onions!) on top of mozz. Interesting how diff the Serrano and jalapeño
    (the one to left mostly off camera) are in color despite being cooked at same time for same amount of time.

    Chili de arbol/guajillo/tomato salsa. 1 package of dried guajillo, 4 chilis de arbol. Garlic,
    cumin, yada yada.

    I saw a recipe that recommended giving the dried peppers a little toasting in a dry frying pan.
    I assume to give the resulting salsa a little smoky flavor. Turned out good in that regard.
    I then slow simmer for ~40 mins the peppers (after cutting up & removing stems) in just enough water to
    cover. Add 1 can of diced maters, simmer a little longer, then blitz with a stick blender.
