    Cheated and was lazy on this...ordered extra potatoes and sausage to go while having lunch at a nearby restaurant. Brought them home and added eggs for breakfast the next morning.

    Hadn't made an omelet in a long while. Had some kielbasa and onions and cheese leftover from our ongoing pizza efforts, so...omelet. Not bad.

    I think the classic French omelette is more custard like, no browning. America style is cooked harder, bigger curds and browned.

    Over easy eggs. I baste them in water and butter as that's the only way I've come up with to cook them as much as the missus wants and without any browning.

    I put home made roasted salsa and a few slivers of lemon drop peppers on mine.

    In Post 942 ^^, I posted a dish from our newest local restaurant - Sweet potato hash with eggs. It is so yummy that my wife and I decided to try to imitate it at home...

    Its sweet potatoes, caramelized onions and spinach hash with over-medium eggs and maple pork sausage. Super delicious. I'd say the restaurant version had nothing on ours! (a rare happening with my cooking)

    My wife made a Polish breakfast item for us, officially known as Racuchy (although her momma always called them Placki Pankracki).

    Regardless of what they are called, they are very yummy...

    Apples dipped in pancake batter and fried in butter. Then topped with powered sugar.

    Not sure why she waited 10 years to make these for me...:(

    More bacon is always a good decision. Looks fantastic.
