    The best bourbon is JTS Brown 100 proof. Hands down. Mentioned by Paul Newman in his first movie about being a pool expert. Costs $15 a bottle when you can get it. Not every state has it, and you have to make friends with the liquor store staff to lay some aside when it comes in.

    Question for all of the scotch drinkers here…I recently purchased a bottle of 49 year old single malt highland scotch in a charity auction. It was distilled in 1964 and bottled in 2013 and is supposedly 80 proof. I’m planning to have a couple of friends over in a few weeks to open it up. My question is would it be better to open it a few days/weeks before we plan to drink it or uncork it and drink it? Any recommendations would be greatly appreciated.

    From what I have read you should not let it breathe for more than about ten minutes, otherwise it will start to oxidize. For the same reason you don’t want to leave the entire bottle open for very long.

    I like it, I don't love it. It isn't bourbon, it isn't rye, it falls under the general American whiskey/mash category which really means nothing.

    It's impossible to describe to be honest ... I can see where some might love it and some might not care for it, it's that different. It might be worth a buy for you at msrp, maybe $50 more, just for the novelty of the experience.

    You don't want to, or have to, open it up ahead of time. It doesn't oxidize like wine, but you want to keep the alcohol where it is (in the liquid, in the bottle with the stopper on) until you're ready to drink it. With the stopper in (assuming it isn't cracked), it does not breathe, although once opened, it also doesn't want to sit on a shelf for months with repeated openings.

    Here's the process: Open it and pour the drams. A classic Scotch glass is wider in the belly than the rim, which holds more flavor for your nose. Let the dram sit for awhile. Purists will tell you to let it sit for a minute per age of the drink. I'm not sure I can wait 49 minutes, but if you wait at least 25-30 minutes, the drink will be noticeably different. The aroma will be stronger, and the liquid will have changed in its composition, both of which add to the flavor.

    There is an actual science behind this. Lower alcohol drinks have the alcohol molecules pretty evenly distributed. In the higher strengths (like Scotch, which is usually 40-45ABV), the alcohol molecules are more clumped in clusters. If you let it sit, a bit of the alcohol will evaporate, and the others open up a bit. This adds depth and more flavor to the drink.

    I happened across this discovery on my own, and then did the light research to confirm what I was experiencing. I had a bottle of Old Pulteney 21, which was the World Whisky of the Year in 2012. I tried a dram, and was underwhelmed. I put it away for awhile, and when I decided to try again, I poured the Scotch, but got busy and didn't sit down with it for a few minutes. It was great. I started doing it with other labels, same result. The science (and outcomes for scotch reviewers who have done the same) confirmed I wasn't just hallucinating - at least not until after 2-3 drinks...

    The same thing happens if you add water to the drink, but water dilutes the flavor, which is a mortal sin for a fine bottle of Scotch. If you have a cask strength, that's an exception, and the branch water not only opens up the flavor complexity, it takes the heat out of the drink so you can enjoy it without losing your breath.
