Most Chinese dumpling houses have their version of this appetizer. Served cold. Looks menacing/spicy, but it's really not, unless you crank up with chili flakes. I craved after my first Singapore visit ~2010 and looked up the recipe online. Super easy to make, preserves crunch for ~3 days, and is a nice vegetable start or side. Here's MY recipe. 6 Persian cucumbers (about 1 lb) cut into 1/2-inch slices. (Some people cut into sticks; some smash; some cut diagonally; etc.) 3 to 4 garlic cloves 3 tablespoons rice wine vinegar 1 teaspoon salt (I use sea salt [my Costco container comes in handy]) 1/2 teaspoon sesame oil 4 tablespoons cooked chili oil (find at any Asian supermarket; brand I like and inexpensive shown [26 oz jar was $8 bucks; lasts me ~ 2 years] Warning for those with nut allergies: PEANUTS IN THE CHILI OIL SHOWN; there IS a version without peanuts) 1. Add rice wine vinegar to large mixing bowl. 2. Add salt to bowl and mix to dissolve. 3. Add sesame oil to mixture. 4. Add chili oil and stir. 5. Wash, pat dry, and cut cucumbers and add to bowl. 6. Peel, then coarse chop garlic. Add to bowl. 7. Mix thoroughly to coat slices. 8. Chill for 20 minutes before serving. Keep refrigerated. Aha, OK, I had something like this a long time ago. I think it was the "Persian" that threw me off the scent. When I was working in North Dakota, there was a Thai couple that lived upstairs that made an appy like this. Definitely going to make a mental note to try this when we are finished traveling. Today so far is nice weather wise. Its mostly been cloudy with some rain here. Today its clear and sunny, might hit 80. Guess I'll grill some Angus burgers and use up the hamburger buns I bought.
So far so good outside. Get out and enjoy. Very very tired of the rain. I have not even used the BBQ this season as a result.
I have to drive out to Chilliwack this morning. So I won't get to enjoy being outside until later this afternoon. Bonus the exit I'm going has a Chevron with Triple O's. Get a cheeseburger and poutine for lunch.

My hot water tank blew up! Been waiting all day for the repair guy to install a new tank. Net I haven't had a shower and don't feel like going out. Was going to have sushi/sashimi and rolls. But now I'm just going to grill one of them Angus patties and have a cheeseburger.
