    It's not as difficult as it sometimes seems when you read about it online, and the nice part about roasting a duck or goose is all the fantastic fat you can save for other things.

    Sliced hanger steak, marinated roasted peppers, and multicolored Israeli couscous with diced cucumbers, pignolis, fresh herbs in a lemon vinaigrette.

    I cut the potatoes in slices and boiled them shortly.
    In a frying pan I fried the bacon blocks with onions and a bit of garlic.
    Then I oiled the ovendish and put a layer of the potato slices, then a layer of sauerkraut and then some of the bacon mixture. Then I poured a mixture of sour cream, milk, salt and ground pepper over it. And then I made a second layer as said before and poured the rest of the sourcream mixture. And to end I ground chili cheese and another dutch cheese. I covered it with aluminum foil and had it for 40min at 200 celsius and another 20 min at 220 celsius with the foil to create the nice crust.
    And everything I used is organic and biodynamic. Good luck trying this!

    Buy a rotisserie attachment for your grill. Best way I have found to do duck.
    Also, try and set it up so that the duck fat, as it renders, collects into a pan or tray and doesn't run off into the fire!

    Alternatively, I have found using an air fryer - assuming you are not doing a very large batch - cranked up to max temp is a good way to crisp up carnitas. Brisket too, for that matter.

    Last Saturday we went to another VFD fund raiser.

    Occasionally we try to return the cooking favor to our foodie neighbors…

    Tonight, we had them over for Oklahoma burgers and homemade French fries. Also some coleslaw made following the KFC recipe. The neighbors brought dessert, two types of cookies - oatmeal butterscotch and chocolate chip sea salt.

    They may have just been being nice, but they said the burgers were the best burgers they ever had…I practiced last week (which I posted here) and I have to say tonight’s were pretty darn yummy and way better than last week.

    Tamales picked up on the porch of the lovely first-gen lady that lives a ways down the valley. Today was green chili chicken and red chile pork with olives. Outstanding as always, served with her homemade fairly spicy salsa.

    I've been boring the last few days. Pork chops and baked potato last night. Made French onion soup the other night. For some reason I feel like a Whopper, might have Burger King tonight. Although my dad does want someone to take him to the casino for poker. A brand new one just opened near my house. Their buffet is only open from Friday to Sunday. Maybe prime rib at the buffet.
