    Saw this truffle “carpaccio” in oil at Costco.

    Made Cacio e Pepe topped with a few slices. Buitini fresh linguine. Ok, this was pretty damn good.

    Speaking of mushrooms! Blue oyster mushrooms, sautéed in French butter, in a French skillet with a little French wine, and a little tarragon. Finished with a little French sea salt. Tres bien.

    Veal cutlet. Pounced it down to make it thinner. Dusted in flour. The butter browned a tad more than I desired, but the taste was a perfect match to the mushrooms.

    Just planted tomatoes and peppers here in the valley....T are you using clarified butter? 500 deg smoke point..no burning...great stuff and easy to make at home. Cheers!

    Ghee is more cooked during the clarification process so imparts a "well done" kinda taste than strickly clarified butter.

    Chef Jean Pierre.....Hello Friends!! He's kinda fun to watch, this is his clarified butter receipe. Cheers!

    Shrimp ramen with Zoodles.

    Made a shrimp broth from shrimp shells, minced garlic, minced ginger, black peppercorns, Red Boat fish sauce, a couple black cardamom pods, star anise, a cinnamon stick, and red pepper flakes. Simmer for about an hour. Strain. Decant off any remaining solids.

    Cooked shrimp in an olive oil / butter mix. Salt, pepper and garlic powder.

    Take the broth, boil the Zoodles in there for a few minutes, add previously cooked shrimp. Mangia!

    Nothing special this week. Last night was grilled cheese sandwich and tomato soup again. Tonight it is either Fatburger or bacon cheeseburger at Five Guys.

    Buying a 5-bone prime rib this afternoon. Might make it tomorrow or Sat.

    The smoker did it's thing yesterday after the dry rub on the brisket and 2 baby back slabs. Beef sausage that I left on the smoker a little longer than I would have liked as they dried just a bit. I need to work on timing for the sausage. Next time.

    Brisket on for ~9 hours; 5 for the ribs at 3/2. Fed 6 plus next door neighbors and her two young kids. Added my scratch mac n cheese and corn bread. The fete lasted late into the evening and maybe one or two bottles of wine too many. Slept like a baby (aka passed out).
