Off topic but oh well, I try to rinse the top, sides, and wash weekly but don't worry about the underside. There are only a few components that will corrode bad like the valves that open the exhaust. They seem to have a coating, but that flakes off in salt. That is a small price to pay to enjoy driving a Ferrari all year! As someone in this forum once said, not driving your Ferrari in the winter is like not making love to your wife all winter, just to save her for her next husband! The heck with her next husband, she will be his problem then, as well as your Ferrari.

I was told to just remove the hose from under the bonnet rather then taking the rear of the car apart

A lot easier to unplug and seal the red marked hose. Should give the same result as there is no vacuum feed to the exhaust valves. Anyone tried this with good result or got potential side effects?

Tested the simple method to disconnect the red pipe today and it did not give any big difference in exhaust noise, so it's not worth it.

Keep driving it for a few days, when I pinched off mine for some reason it took a couple days until it kicked in.

Remove the black hose from the left side (where the finger is pointing in the picture above)
Place a golf tee in the open end of the black hose, cap the open end of the pipe to keep dirt out
The difference in sound is night and day below 3000 rpm's
Easy to do and easy to reverse if needed

Does it effect anything else? Like the operation of the sun-roof (no pistons that operate with the vacuum)?

I assume that is for the Original Cali? Not the Cali T?
