Someone knowledgable needs to actually look at the car in person. Either it is an example in fine fettle, or its a work in process. If the owner sells at a loss, he would be among the majority of classic car owners who get in deep and are not focussed on investment outcomes as the main event. It is also obvious that the customers are signing up with a charismatic showman, and if they get entertained and value that, that is part of the proposition. Throw in some controversy like in this thread, and we probably are increasing the "Donnie" brand value!

Pulling a Countach engine does require turning it near vertical especially when the car is kept level. That said Donnie Callaway obviously is on his very first Countach and Matt Farah gets to pay for his education
The going rate for a full set of suspension bushings for a Diablo (Countach probably uses the same) is $5-6k

Yes but that is the off the American shelf ones. Donnie cares for his client to have only the best one so he flys to Italy for the customer to pick the freshest bushings. He says at 30:42 he pmust go to Italy to buy!

He could probably get some nature of umbrella policy. For conventional garage keepers insurance a license needs to be held in owners name. Licenses are cheap and easy to get. No reason not to have one unless for some reason they will not allow it....like being a crook. Or if you are trying to stay under the radar of regulations. But just like with a contractor, if you are not paid you have no legal standing to enforce payment. Crooks like this usually collect in advance. Get payments and work against the payments.
