Why after the first pie cooked in about a minute with burnt edges while the bottom stayed soft at the oven high didn’t fair well, and we turned down to about 650, cooking for 3 minutes while rotating made an almost perfect pie (perfect would be the wood flavor).
Delivery yesterday and steaks on the BGE yesterday also. The cart on the Tabasco website was goofy and I didn’t mean to order so many duplicates. Image Unavailable, Please Login Image Unavailable, Please Login

Bacon cheeseburger and fries from Five Guys last night. See nothing worth posting about or taking pictures of.
Old school butcher will do the less common cuts like oyster cut and seven steak. Good eating! Great presentation. T
Hey Max! Image Unavailable, Please Login Wife keeps sending me foodie articles about using your cheese rinds to make soup broths. Sure, why not, I'm as cheap as the next guy! [emoji2] Image Unavailable, Please Login Chicken soup - chicken, salt and pepper, garlic powder, a smidgen of tarragon, and cheese broth. Add in frozen peas at the end. Cheese broth (used rinds from a Jarlsberg cheese). Gave the final soup a tad more umami. Clean up of the cheese broth was a pain in the neck. T
This unit here looks like a great option. I'm happy with our Ooni gas only, but I would have given this dual-fuel, lower-cost option a hard look if it was available back when we got one. This looks like a great way to go and its got that turning stone, that is likely a huge game-changer (I had a pie stick/get a small hole for the first time in a year due to having to turn a pizza on our last attempt...) These posts led me to spending a minute on amazon and wow are there a bunch of new-to-the-market options here for 1/2 the price of ooni. Its amazing how this whole industry started recently and has blown up!
Jealous. I've done pizza-pilgrimage to NYC and Chicago, but not to the homeland in CT...on my bucket list still...
Will catch up here with a few posts...I'll admit up-front that some of these are more breakfast-y than dinner, but we are only eating one meal a day these days, so its what you get here First up, another pizza night. It was a "meh" or even a "meh-minus"...oh who am I fooling, this was a disappointing pizza night. I thought I made the dough the same way as the last two cooks, which went very well. But the dough was much stronger this time and didn't want to stretch out nicely. And it cooked oddly and either burned or stuck (neither of which we have had any issues with of late - I think I might have let the stone get too hot). Anyways, its still pizza, and the old saying remains true - there is no such thing as bad pizza Pizza 1 = Mushroom and onion and thyme Pizza 2 = Pepperoni, olives and onion Pizza 3 = not picture worthy - 'nuff said. Ate at the local diner for the first time in over a month - they were closed for the month of October to recover after a typically brutal busy summer season here... The Chef celebrated by indulging his creative side for a couple of reopening day specials; - Cassoulet complete with confit duck leg and topped with fried eggs and some homemade focaccia -Avocado toast with homemade kimchi and eggs We are beyond lucky to have them and their restaurant in our little rural valley. Its typically a pop in and eat diner, but on this re-opening day there was a 2+ hour wait when we arrived (we went back home and had her text me when it was time to run down there again). Wife made butternut squash soup with homemade chicken stock and the last pickings of sage from the garden and some croutons she made with the bread from the local bakery-sold-from-the-truck-bed lady. Perfect for our daytime highs of 35F lately... Image Unavailable, Please Login
Had the best breakfast burrito of my life the other day at the oddest little restaurant a couple of towns up valley - the place serves diner food (of course) and Filipino, Thai and Indian food (for example I got samosas with my burrito the other day). Anyways, this inspired me to try making a great breakfast burrito... Went with: - A bunch of very crunchy bacon - Then cooked diced potatoes in the bacon fat (more like deep frying almost) - Stirred up some farm eggs in a bit of the bacon fat, then crumbled in the bacon - A bunch of mexican chorizo - The usual toppings of salsa, sour cream (didn't have crema) and cilantro - Bought the biggest tortillas they had at our store Pretty darn yummy any time of day! Beef stir fry with onions, all we had was beef chuck so the meat isn't as tender as I'd like but otherwise not bad. Image Unavailable, Please Login Image Unavailable, Please Login Image Unavailable, Please Login Image Unavailable, Please Login
Another Saturday night harvest supper. This time in Rosston, Texas. Fun driving roads up that way. Image Unavailable, Please Login Wife and I spent the morning at the Boardwalk Ferrari Fall Concorso, and this may still have been the rarest car we saw all day. A Mahindra Roxor! [emoji2] 2.5 L DI turbo diesel. Image Unavailable, Please Login Turkey and the usual fixings. One unusual - to me - item was warm potato salad. Bacon or fat back, always a plus. Had a sweet and sour tang going on. Thumbs up! T
Really? Cool. Didn't know that. Never saw it around here before, which is odd since Texas has had many German settlers, albeit moreso in Central Texas. https://www.tshaonline.org/handbook/entries/germans Today, roasted poblano soup. This recipe, but vegetarian, for our friends. https://www.yellowblissroad.com/chicken-poblano-soup/ Image Unavailable, Please Login Nice pepper heat. Noticeable but not crazy. Good flavor. T
Pizza Hut last night and left overs tonight. One large Supreme and a large meat lovers. Not post nor picture worthy.
Another poblano soup recipe, not vegetarian and not low cal but very good. I add a few more peppers https://magnolia.com/blog/recipe/f6598f30-968c-46e1-89f6-cd61f1dd3c8b/creamy-chicken-poblano-soup/
A rare occasion for us...two clinkers out of 3 dinners this past weekend. My wife sauteed the halibut perfectly and I tried a new sauce...boring! Dull despite fresh herbs, butter, lemon, wine and chix stock. We rarely have lasagna and I asked for it. Janet tried a new recipe...turned out to be a giant glob of cheese. Awful.
