Keith...Lately, we've been doing halibut with pesto. My wife - who is not a big fan of fish - loves it...T
agreed, halibut can be somewhat dry...even coooked correctly. I must say bit I prefer rockfish. But Halibutt makes a nice fish taco....I fish them inSF bay in calif. Good eats....
A lot of options for sure. Kinda like smokers now... This was an experiment (ok, 3AM insomnia impulse buy ). I knew I wanted the larger size (16" vs. 12"/13"). The rotating stone and flex fuel pointed me to the one I picked up for $350. Works great, but lacking the wood smoke flavor/aroma of the brick oven joint in town. Nephew visiting this weekend and I'm thinking about trying lump charcoal. Also seriously looking at the Bertello 16" that uses propane and wood simultaneously. The lump charcoal run will help decision-making.
FWIW, Shredding chicken by hand is a PITA. For this recipe or shredded chicken Tacos, etc., I poach the chicken +- additional spices then shred the chicken using an electric hand mixer; quick and easy.
Tried something new and fun (and yummy). Homemade falafel wraps with grilled haloumi cheese, fries, pickled beets, hummus, a quickly made yogurt/herb sauce, and a few other toppings. Image Unavailable, Please Login Image Unavailable, Please Login Image Unavailable, Please Login
Top notch. "grilled haloumi cheese, fries..." AzIt - both regular (potato) fries and halloumi (cheese) fries? Had to Google it, something I had not heard of... https://feelgoodfoodie.net/recipe/halloumi-fries/ Kind of sounds like Middle Eastern mozzarella sticks. Not sure I have seen halloumi cheese around here. If you want to amp up the garlicky goodness, try toum. https://www.seriouseats.com/traditional-toum Pickled turnips are a good, go-with... https://maureenabood.com/pickled-turnips-and-an-introduction-to-aunt-hilda/ T
Just order some to try. https://www.amazon.com/KornosTM-Authentic-Cyprus-Halloumi-Grilling/dp/B0BH8JNK3F/ref=sr_1_3?crid=CIT2EDAN8X10&keywords=halloumi+cheese&qid=1700348208&sprefix=Halloumi%2Caps%2C135&sr=8-3
Cool. Let us know how it tastes. I've been looking for a good cheese to use in saganaki (flaming Greek cheese appetizer); this could be it! T
Strips and filets tonight. All from Wegmans. Good but not fantastic. The strips were much better than the filets. Still very good overall. Image Unavailable, Please Login
That's not food. This is food! Feast your eyes on my farm breakfast, a lettuce taco with hot Pace sauce. Image Unavailable, Please Login
Maters @ Kroger are still pretty good this late in the season. Last batch of corn tasted like Dent corn. Blech. Bone-in rib roast on the roti tonight! T

Salt, pepper and garlic powder rub. Nothing else. Took about 1.5 hrs plus 15 - 20 min resting (uncovered). T
obligatory monthly salad night (meh, who am I kidding, quarterly salad night) I think its related to a touch of OCD, but I really love clean-out-the-fridge night. This salad had so many odd tidbits that needed to be finished up from the fridge; grilled chicken, the last of the falafel, some roasted beets, sundried tomatoes, the last of the haloumi, the last of the yogurt/herb sauce from the falafel wraps, oh...and some lettuce and veggies. There...now I've checked off "salad" until January! Image Unavailable, Please Login
It was awesome. So much so that "Mrs. I Don't Like Leftovers" snuck in a small leftover piece for lunch after a drive in the country! [emoji2] T
