    Breakfast today… omelettes made with local eggs, sautéd leeks and red bell pepper. Shaved Swiss Gruyère cheese on top. Sausage from Edwards Virginia Smokehouse. Fruit with blueberries, blackberries, raspberries, mango, and star fruit. My wife and mom got maple syrup on their fruit. Of course on my omelette was Tabasco sriracha sauce. Then we ate by the chiminea. Beautiful morning.

    If you haven’t been and end up near one (Nevada and California locations I think)…

    …get to Peg’s Glorified Ham & Eggs and get their Heavos Rancheros. The best I’ve had anywhere. Was Christmas Eve brunch this morning…

    (order with the chorizo patty - it’s under the eggs. Their ranchero sauce is amazing, my wife ordered it as a side to pour on her chorizo scamble)

    Freakin' amazing...the little diner's newest thing is this breakfast Chili Relleno stuffed with chorizo/potato mixture, topped with two over-medium eggs, on top of a tangy guaca-salsa.

    (unlike 99% of chili relleno's out there, this one is very, very crispy fried and crunchy on the outside)

    Roasted potatoes and onions that were tossed in the oil from the chorizo, topped with Mexican chorizo and fried eggs. (The sour dough, butter and eggs are all from local folk)

    At the local diner, sweet potato and chorizo hash with shaved manchego cheese and aioli, topped with over-medium eggs. And a biscuit.

    I’ve likely mentioned before that a neighbor down the road has a shed that is an “honesty bread box” bakery. She puts baked goods in there once a week and you stop in and grab what you want and leave the cash.

    Her cinnamon rolls are amazing…

    That looks so good! So classic with the giant cubes of ham, reminds me of going out to breakfast when I was a kid and getting a western omelet. Sadly I hadn’t been introduced to cholula back then…progress!

    My breakfast today was no looker, but it was yummy…

    tortilla “taco” stuffed with scrambled eggs with chorizo and potatoes, plus some cilantro, cheddar, cotija and salsa.
