A nice dinner with a nice bottle of wine at home with your lovely bride. Sounds much better than going out to me.

I did take out crabcakes from a local fishery but added a multi color Israeli couscous salad with feta, English cucumber, red onion, toasted pignolis, and parsley in a lemon vinaigrette.

Tonight I nailed risotto. It came out perfect. My muse and guide as been the risotto I get at Il Postaio. For a couple of months now I've be telling myself "I can do this." The bite, the right amount of liquid, etc. Once the basic risotto is accomplished, the other ingrediants can change and become relatively easy additions. The basics are there on the side of the box...everything else becomes the cook's touch and taste. In a couple of days I'll be having roast leg of lamb (bone out) with garlic and rosemary, risotto parmigiano reggiano with asparagus, and a fresh salad.

We had Champagne and a bunch of munchies last night: shrimp, cheeses, pate, goat cheese puffs Janet made. Before everyone accuses me of being a Foodie Wimp, baby backs tonight!

No shame in that meal. That’s pretty much our Sunday night thing. We typically go out for lunch on Sunday and folks usually aren’t hungry at the end of the day. We tend to pull out some really good Wisconsin cheeses and sausages as well as whatever else seems to fit. I usually break up in a bottle of champagne. Unfortunately, no champagne tonight. I’m on call.

    No pics?!? [emoji6]

Congrats. Risotto is a patience thing, and so I avoid it like the plague! Orzo pasta is more my speed. Boil until al dente, then rinse in cold water to cook.

It's been a disappointment thus far for summer corn. We've tried them from east coast to Midwest and none has been exceptional. Good to meh to "are you sure this ain't field corn?".

Peaches, on the other hand, have been outstanding! If you can find peaches from Stratford, Oklahoma, grab as many as you can carry! Old timer at the fruit stand a few weeks back told me they were better than any Texas peach. After restraining the wife from starting a fracas, we tried a couple and they were great.

Been a while since I posted here.

Had an early dinner, post workout. I eat so early thanks to my work schedule. I'm hungry by 4pm these days. Lol

Brisket and pork belly chunk tacos.

I have a crummy cell phone with a lousy camera so the colours above look kind of sickly. Casual Tuesday...drinking an Antinori Toscana... another great Costco bargain. Cheers!

Corn and veggies here are usually marginal. Going back east is such a rush with tasty tomatoes, corn, and other wonderful fresh treats.

All kinds of great uses for confit cooking!

Possibly some duck breast confit, and truffle fries cooked in the duck fat afterwards........

The duck was more rare than the photo shows. The French would call it "rose". Sister Carolyn's orange sauce. Football potatoes in duck fat. Carrots with tarragon.
