Swiss chocolate roll with raspberry cream cheese buttercream filling and chocolate ganache. Baked it yesterday and froze it overnight, then trimmed off the ends today (with my breakfast coffee), then covered with ganache, in the fridge to harden, then in the freezer till service on NYE dinner.

Did a rally down in NW Arkansas 2weeks ago. First day we stopped at Oark Cafe for lunch. I got possum pie. I sat down with a group of uppitys from California. Told them I got the possum pie with real possum and it is gooood!!! They about lost their lunch!!

 

For Easter. Sour cream chocolate bundt cake, I’ll serve it with softly whipped cream and yellow and red raspberries.

Silky chocolate terrine-very rich, so a thin slice is best. Rinse your knife in hot water between slices. As it’s quite sweet I only added some lemon juice to the raspberry coulis.
