I was at a winery pickup yesterday(Sat). Happen to be wearing my Ferrari tee-shirt. Started a conversation with a guy and after a few minutes he said let me show you something, as you are a car guy. He pulls his iPhone out and shows photos of 375MM his family was having restored. Only 8 of these cars were every produced! The wife's grandfather owned the car and got asked so much about the car he starting saying the car had been destroyed. Thus in many registries the car is listed as destroyed. He also showed me a photo of the car back in 1954 or 1955 at Le Mans. Didn't win the race but participated. Once the car is restored it will be shown at Monterey. Just made my day! The guy was very humble and nice and I appreciated he shared the story.

Didn't mention the name but the original matching numbers engine was bought from the daughter after the owner of the engine passed away.

Again I talked to this guy for about 5 min. He did say a 100 point restoration was being done by the best restoration shop in the US. And I should look out for the car's debut at Monterey. Unfortunately I didn't ask when that would be. As I previously said , he did show me a back/white photo of the car from 1954 at Le Man's with the driver standing in front of it. The driver was Italian and I can't remember the name. I can telll you it was not Fangio or Nuvolari. Being there were only 8 cars built, I think you all , especially Marcel with your deep knowledge should be able to determine which car it is. The guy lives in Menlo Park , CA.

I have every reason to believe this question will de-rail the thread to a different part of the galaxy. I'm genuinely curious though so here goes; what goes into determining which restoration shop is the best?

Good question. The guy inherited the car from the wife's family and had no awareness of the world of Ferrari's , Le Man etc. He contacted someone and asked the same question and was provided a list of 5 restoration shops in the US. He picked the one that was considered #1. IMHO, a shops reputation is based on the track record they have had with other restorations and the reputation of the skilled craftsman that work at the shop.
