I would not like to think that a Ferrari parking brake would ever need to be used in an Emergency...lol I think it would end in an epic fail.
Leave it in gear when you park it, the parking brake is kind of a ...joke.
A 612 is a 2+2, just in disguise. There is no seat adjustment up down, its fixed.

After a short ride...carefully touch your rims. If you have a hung up caliper it will be exceptionally hotter near the hub.

Smell from the rear could be a hung up brake caliper. The cluch is in front, and the smell is kind of the same.
You might consider doing your belts as you are doing 98% of the work. Steering rack, swaybar, hoses.
