I don't think the shims change, they are hardened steel. The valves need adjustment because they recess into the heads so you need a bigger shim...
I bought the set because I wanted all sizes on hand when I did the valves - you don't know what size you will need until you measure the clearance...
Unless there is something I'm missing, your price is kinda high. You can buy a Metelli Valve Shim Kit - 29 mm from NewCo Products in California...

I removed these catalytic convertors from my 1994 512TR in 2002 at 11,000 miles and replaced them with test pipes. We have no emissions testing...

These fit a 512TR but the build quality did not seem as robust as the Ferrari units. Then again, all they do is open and close and these were $11...
