Does anyone know where I can get a graphic of the vacumn hoses? I have some hoses with a bolt stuck in the end to block them off and I see places where a hose should be attached but none is present. The only shop manual I can find is the 1978 Carbed Mondial, not too much help with an 81 2 valve injected engine.
Go here: http://www.ferraridatabase.com/The_Downloads/Downloads.htm and download the OM for your exact year/model/version -- the figures in Section 3 may help you with the vacuum hose routing.

You can access the standard (euro) verison Spare Parts Catalogue (SPC) at www.ricambiamerica.com or www.eurospares.co.uk. Unfortunately, no one has reported an online source for the US version 308i-2V SPC (and since you are asking about disconnected vacuum lines, I'd guess that you have a US version 1981 308i-2V -- yes?).
Yes, I have the 1981 US version 308 GTSI 2 valve injected....can't find any manuals of pix for this specific year and make.
