I work for a company that makes digital gauges and we would like to fit a set into the owners Ferrari. Long story short I don't want to swap out sending units in the car with ours in fear that it may interfere with the ECU in the vehicle. So my question, Does anyone happen to know the ohm range for the oil pressure and temperature sending units that are already in the vehicle? I cant seem to find it online anywhere and if i knew the ohm range I can just reprogram our gauges to work within the senders range. Any help would be appreciated.

Good luck with the wiring diagram they are terrible for that car

Some of the ohm stuff is in the workshop manual kinda generic but it's bosch stuff just buy the sensors and run them through their range I don't always trust the print that Ferrari puts out

The oil pressure sender on nearly all recent Ferraris (since the 348/512 TR vintage) is a VDO model 360 040, 150 psi, 10-180 ohm. The oil pressure sender shouldn't be connected to the ECU anywhere - it's only a gauge sensor.

The water temp sensor for the gauge is made by Veglia, and is probably an NTC type thermistor, however I don't have specs on it handy - maybe someone else can jump in here & confirm. There are separate sensor(s) for the ECU and the gauge, so you shouldn't have any ECU related issues connecting your gauges to this sensor.
