Hi, I haven't used my 308 for a few years, I started her up and noticed my water losing coolant and my oil increasing fit which in assuming the waste is nickname with the oil? It's a 1979 dry sump, is there anything other than a blown head gasket that could be the cause? Any help would be greatly appreciated. Kind regards Paul

Unfortunately, if I understand the description what you describe is a classic symptom of a blown head gasket. :(

If you oil looks like chocolate milk, then Mike is correct.

Do not forget to check the aluminum plugs in the heads; in case of heavy corrosion may leak water in the oil pan.

Hahahahahaha......I'll take a stab at it: "the water is mixing with the oil"?
Alternately, as it's a dry sump and not been driven in two years, it's possible all the oil has drained to the sump and OP is seeing the oil level rise as the tank is refilled. Can't provide an alternate explanation for the water level decreasing, but clumpy, chocolate milk-like oil in the tank can occur from excess condensation in the tank mixing with the oil and will dissipate as the oil gets up to temp.
