Oh man... I hate to see that... No matter how much it is to fix, just think how good it will look when it's done...
$2k to $3k, depending on local labor rates. Consider also that "as long as you are in there..." that you should carefully inspect the defroster vents in the forward part of the dash, and replace any parts that may need it as well. At the minimum, you might need to repaint the metal mesh grill. If the leather is that bad, you may need to replace all three dash vents too, figure around $1200.
I seem to recall there are some older threads about cheaper options in the 355 section and in old fchat - maybe try a 'search'
I had mine replaced for $ 300 here in chicago by a custom shop, but i had to remove it myself ,pain in the ass, but it turned out exellent.

There is a Naugahyde Vinyl that is so close a match to the leather I have to look at the back to verify which is which. Entire dash removal isnt too bad. Only tricky part is the French stiching around the instrument binicle. Do the airbag at the same time making sure they embroider the word "Airbag" on the new covering. Exact thickness match of the foam under the leather is critical, no thicker or thinner can be used. Made that mistake on the first one! Leather is meant for seats and saddles. Not sure what DS made the decission to use it for dashboard use. Had to be a job security decission involved in that choice. Dave
Last one I did was $2800 including new vents and leather. The vinyl is a viable option, majority of lookers would not notice the difference, should be a little cheaper than the leather hide costs.
Are those staples up by the window? And, if they are, how did they get there other than a windshield removal?
One attractive, but non stock option would be to use alcantara. Seen it done once here on fchat, looked really nice.

Yes, although they give discounts if you mention you are with pretty much any car club, no id required! So call and ask what the latest deal is before jumping on the ebay offer. I am not a big fan of their Prestine Clean, but I reorder the Rejuvenator Oil every other year.
+1....although I treat my dash at least 3 times per year, sometime 4. No special procedure, I just smear it on rather generously, wearing a protective glove (latex, vinyl, whatever). Then remove 12 to 24 hours later using a damp towel, rinsed in hot water. Rinse frequently during the removal process. I do not use the Prestine Clean, as I find it too harsh, and appears to lift some of the dye out of the leather.
