I have a 2000 year model 360 that has what i would call a "poor throttle connection" between when you place your foot onto throttle pedal and then the time delay before engine speed increases.

This is most annoying when driving in a fast environment and you need good throttle response and the 'connection' between your foot and the engine working quickly.

Can anyone suggest what may be causing this?

Mine is 2000 also and I have somewhat similar experience. It does not rev like I'd like it to. It's been driven by others, mechanic and race driver included, who feel there is nothing wrong. It's been dyno'd and pronounced healthy.

It's more noticeable when not fully warmed up. Once warmed up it's less of an issue and once in the higher rev range (4~5k+) it's perfectly responsive but I'd still describe it as a bit sluggish at lower revs.

What you have are Bosch DVE5's which are Electronic Throttle Bodies that I believe operate under a slave/master strategy with the ECU. That's not the issue though and IMO neither is it the Potentiometer since any errors there would immediately shut your throttles down. I think it's more related to emissions. The Engine Managenmt System, including the throttles, are mapped to meet emission standards at all times which may retard the throttle opening under fast accelerations. The ECU must be receiving bad signals from any one of the numerous sensors before commanding throttle angle. It's the price you pay for "drive by wire". Good luck.

As above. I'd suggest getting the MAF's scoped. There is also an adjustment on the pedal itself, which needs checking via an SD2.

I have been underwhelmed at times with my throttle response too.
It seems that my brain and foot work faster than the circuitry. This is not ideal but it can be workable if you re calibrate your expectations a bit. 5K miles and I am getting pretty smooth in most all situations. I sort of tell myself that it is the system protecting my parts from me from giving less than ideal inputs!
